Sculthorpe Moor sits just outside Fakenham and does exactly what it says on the tin - it's a proper working nature reserve where you can actually spot things rather than just wander about hoping. The habitat here is managed specifically to attract wading birds, wildfowl and raptors, which means spring and autumn migrations are genuinely worth planning around. Bring binoculars. Seriously, don't show up without them.

The reserve has observation hides dotted about - low-key wooden structures that let you watch without spooking everything back to wherever they came from. You're looking at bitterns, marsh harriers, and if you're lucky, spotted crakes. The walk itself isn't strenuous; most people spend two to three hours poking around the trails and platforms, though you can do a quick circuit in under an hour if you're pressed for time.
